How are you? Nice to hear from you and thanks for the sweet letter. I can make my famous quick sauce/filletto de pomodoro...great for us single people and easy to make in minuets. Then there's Mom's sunday sauce also known in Brooklyn as "Gravy" which takes 3-4 hours of simmering along with Veal and Pork that gives awsome aroma and flavor to the sauce.
